How to dial in your grinder for espresso

STEP 2: Experiment and adjust by taste

You have established a good starting point for your espresso.

But now you get to the really fun part!

It's time to take your espresso to the next level by experimenting and tasting your way to the best espresso.

Lars talks about how to adjust the taste

Suggestions and rules of thumb for how to take your espresso further

Remember that espresso is very complex. Things can quickly get out of hand if you start turning multiple knobs at once. We therefore recommend that you only change one parameter at a time.

  • Try adding or removing half or a whole gram from your filter basket. What does it do to the taste?

  • Try grinding your coffee a little coarser, so you hit 44g instead of 40g per cup - but still keep the brewing time at 28 seconds - what happens to the taste?

  • What happens if you extend or shorten the brewing time?

There are many ways to change the taste of your espresso - but try to stick to small changes at a time. Often, great taste is not about something being wildly sweet, sour or bitter - but about balance.

Consider aspects of the taste such as body, clarity, transparency - maybe the coffee even tastes like something else you know. Maybe apple, chocolate or mango?

How does your coffee taste when you mix it with milk foam in different amounts? Is there anything we should change in the taste of the espresso so that it is better suited for, for example, cappuccino?

Use your taste buds and your sense of smell. It takes time to develop your sense of taste, so don't get frustrated if it's hard to taste the difference between coffees or clearly define different flavour notes.

Make sure to taste your espresso often, as the taste can change throughout the day. For example, small temperature differences in water or in your grinder can mean quite a significant taste difference, which you will need to adjust and compensate for if you want a consistent and balanced coffee throughout the day.
