A "cold" coffee
"Cold" is the direct translation of the word Qabballe from the local language of Uraga, Guji, where our natural Ethiopian coffee is produced. This does not mean that you should drink the coffee cold – the name refers to the high altitude, the climate, and the area where the coffee berries grow.
Qabballe is a new kindergarden project for Sookoo Coffee. Led by Ture Waji, the company has been producing delicious coffee since 2018, and the latest addition is this Ethiopian heirloom. It is produced in very fertile soil, high altitudes, and with jungle forest around, which creates a perfect microclimate for the coffee plants.
The work towards certified organic farming
The Qabballe project works towards certified organic production. The goal is to harvest the first organic quantity in 3 years time (as obtaining certification is a long and costly process).
The coffee is already produced only with natural fertilisers such as coffee husks and manure, but with growing support and income, Sookoo has the means to incorporate the certification.
Sookoo Coffee
In addition to working towards organic certification, Sookoo Coffee is also taking other measures to make their business more sustainable. The natural processing of the coffee requires very little water at the mill, which benefits both the environment and people. In addition, they follow a "women-first" policy at the laundries and have built both a local school for the children and roads to improve the infrastructure in the area.
Notes
This coffee is an ethiopian heritage, which fully lives up to the good reputation of Ethiopian coffee. It is sweet and fruity with notes of blueberry, bergamot and jasmine.
