The coffee:One of the very interesting flavors we have experienced at the cupping table is the sweetness of cola with the taste of natural cola nut, canned apricot and mild green apples. This coffee is full of fruitiness, but has a low and mild acidity.
The coffee is a naturally processed Java that has undergone fermentation for 160 hours, but due to the cool climate it is in no way over-fermented.
The result is a super interesting coffee that is both juicy and smooth, and quite complex with many flavor notes that develop as the coffee cools.
What is natural processing?
Natural coffee is made from coffee berries that are dried exactly as they are - that's why it's called that. This means that both the pulp and the shell are still on the berry. This differs from honey-processed coffee, where the skin is removed from the coffee berry, while the pulp remains when the coffee berries are dried. And with washed coffee, everything is removed except the bean itself.
