Wessi Tima
Ethiopian Coffee
This November we are pleased to present to you Weessi Tima – a coffee with a unique flavour profile, grown at extreme altitudes in the Guji region of Ethiopia. We are always looking for the best flavour experiences and this month's coffee is no exception.
Grown at a High Altitude
Weessi Tima comes from coffee farmers in the Guji region, specifically from the Weessi washing station, which is located in the small village of Tima. Here the coffee is grown at an altitude of up to 2300 meters above sea level, which creates perfect conditions for the coffee plants.
At these altitudes, the coffee grows more slowly, giving the beans time to develop complex and exciting flavours.
A Long Drying Process
After the harvest, the coffee berries must go through a careful washed processing, where the beans undergo a fermentation for 12 hours. They are then laid out to dry on traditional, raised African beds under the Ethiopian sun for 14 to 18 days. This longer drying process helps preserve the pure taste and natural sweetness of the coffee and ensures that the flavour notes remain clear over time.
Floral and Fruity Notes
The Weessi Tima coffee is characterised by a floral and juicy profile that is both complex and delicate. From the first sip, you will be able to perceive flavours of honeysuckle and ripe apricot. Honeysuckle gives the coffee a floral taste. This floral taste experience is supported by a hint of orange peel, which adds a touch of freshness and gives the coffee a round and well-balanced taste.
