The Kayon Mountain farm has been owned and operated by Ismael Hassen Aredo and his family since 2012. The farm covers over 500 hectares, of which 300 hectares are dedicated exclusively to coffee cultivation.

Native trees, such as acacia trees, provide natural shade for the coffee bushes. When the leaves fall, they are converted into compost and act as natural fertilizer.

The farm actively contributes to local development projects – including donating building materials for schools and infrastructure. Kayon Mountain is also a popular workplace for local seasonal workers, who return year after year thanks to decent wages.


Genetics and origins
Ethiopian Heirloom – what does it mean?

In Ethiopia, the term heirloom covers thousands of local coffee varieties. As you may know, coffee originally comes from Ethiopia, where it has grown wild in the wild for millennia.

Heirloom varieties can generally be divided into two subcategories:
The first is JARC varieties , which were developed by the Jimma Agricultural Research Center. Since the 1970s, JARC has identified and bred specific varieties for cultivation.

The second group are regional landraces – wild coffee bushes that grow naturally in the landscape. Some of these have later been cultivated on specialty coffee farms.

It is estimated that there are between 10,000 and 15,000 heirloom varieties in Ethiopia today – the vast majority of which are still not genetically mapped.


Terroir and taste
From volcanic soil

Ethiopia has seven coffee-producing regions, each with its own characteristics, shaped by landscape and climate.

The seven regions are Harrar, Sidamo, Yirgacheffe, Limu, Lekempti, Jimma and Guji – where Kayon Mountain is located.

Guji offers great variation in terrain, rich volcanic soil, good rainfall and natural shade – ideal conditions for producing high-quality coffee.

The geological and climatic diversity also creates different flavor profiles. Coffee from Guji is often known for its rich, sweet and fruity notes. This coffee is no exception – here you get flavors of blueberry jam, ripe apricot and Earl Grey tea.
