Coffee of the month: Hernández Pacas
Honduran Honey Pacas
This month’s coffee is a delicious honey processed Pacas from Finca Cascarita in Honduras, owned by our good friend and long-time partner, Hidardo Hernandez. Hidardo is not only a talented coffee producer and innovator, but also the co-founder of the cooperative Cafesmo.
His dedication and insatiable love for coffee is very obvious when you taste the coffee. It is sweet, creamy and complex. With some coffees the flavor profile changes as the coffee cools - this is definitely one of those coffees. When hot it has a very apparent creamy toffee-like note, and as it cools the coffee will taste more fruity, reminiscent of ripe pears, honeydew melons and fresh sugar cane juice.
New fast roast profile
Part of being a modern coffee roastery is never settling for “good enough”. In the past few months we’ve been testing new ways to roast coffee more energy efficiently - while making sure the coffee tastes as delicious as always.
On most coffee roasters your start temperature and speed of roasting is limited by a roasting defect called scorching. This is when the edges of the beans are burned by the high heat of the drum. Scorching will give the coffee an unpleasant, bitter and ashy taste.
However, on our roaster, the Loring S15 Falcon, this is much less likely to happen. The coffee is roasted using hot air instead of a hot drum, which means that the sides of the roasting chamber are much cooler than on a typical roasting drum.
This is why we’ve been able to create a faster profile with a much more aggressive temperature development. We have decreased the roasting time by more than 15% which will in turn decrease the amount of electricity and gas used.
We’ve tasted this profile up against many of our typical profiles, and we are really excited about the flavours we are able to highlight with this type of roast profile. The coffee has great sweetness and transparency, exactly what we want to unlock from the coffee.
